Ingredients

- 1 package graham crackers (crushed into fine crumbs)
- 1 package instant vanilla pudding mix
- 1 ½ cups cold milk
- 1 tub whipped topping (Cool Whip)
- 1 cup cream cheese, softened
- 1 tsp vanilla extract
Chocolate coating:
- 2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil (or butter)

Instructions

1. Make the filling
Whisk vanilla pudding mix with cold milk until slightly thickened.
Add softened cream cheese and vanilla, mix until smooth.
Fold in whipped topping until creamy.
2. Add crumbs
Mix in crushed graham crackers until mixture becomes thick enough to roll.
Chill for 30–45 minutes.
3. Roll into truffles
Scoop and roll into bite-sized balls.
Place on a parchment-lined tray and freeze for 20 minutes.
4. Chocolate coating
Melt chocolate chips with coconut oil until smooth.
Dip each truffle, coat completely, and place back on tray.
